The Semi-Washed process begins with the selection of fully ripe coffee cherries. The cherries are pulped, leaving some mucilage intact, then washed lightly. The coffee beans are then dried on African beds for 21 days until the moisture reaches 11-12%. The coffee is then hulled and sorted for size, density, and quality.
Resulting in a balanced and complex flavor profile with moderate acidity and spicy notes. A smooth, sweet milk chocolate with typical bitterness with a very clean aftertaste.
