Product Description
The Semi-Washed process begins with the selection of fully ripe coffee cherries. The cherries are pulped, leaving some mucilage intact, and then washed lightly. The coffee beans are then dried on African beds for 21 days until the moisture reaches 11-12%. The coffee is then hulled and sorted for size, density, and quality. This results in a balanced and complex flavor profile with moderate acidity, creamy dark chocolate with a slightly pipe tobacco and mild apricot finish.
